The artichokes, from which the baby artichokes come from, are suitable to be planted in Puglia. Only the best of our artichokes are both harvested and processed on the same day. The artichokes leaf contains an active substance which has a slightly therapeutic effect for kidney and liver diseases.

According to our recipe, they are boiled in water and vinegar in order to obtain their excellent organoleptic characteristics.

They contain:

• vitamins: B1, B2, PP, C, pro vitamin A and E;
• mineral salts: calcium, phosphorus, iron, potassium, copper and zinc.
